Guilt Free Choc-chip Cookies
 

Gluten free, Dairy free & Vegan option

Ingredients

 

  • 1 + 1/2 cup Almond meal

  • 3/4 cup buckwheat flour

  • 3/4 tsp baking powder

  • 2 tbsp organic coconut sugar

  • 1 chia egg 

  • 4 tbsp coconut oil

  • 1 tbsp organic honey (can sub for maple syrup for vegan option)

  • dash of vanilla essence

  • 1 cup dairy free chocolate chips 

 

Method

  1. Preheat oven to 180 degrees and line a baking tray with baking paper

  2. In a large mixing bowl, add all dry ingredients, chocolate chips & the chia egg

  3. In a separate bowl, add coconut oil & honey and heat until the coconut oil is melted

  4. Add the vanilla essence to the coconut oil and honey

  5. Mix the wet ingredients into the dry ingredients until it forms a cookie batter

  6. Using your hands, roll the batter into small balls and press onto the baking paper

  7. Place in the oven for around 25 minutes or until you can see they are cooked.

  8. Once cooked, let them rest & cool down before storing away.

    * Makes 12-16 cookies*
    (Depending how much you eat before you cook them)
